Sodium Propionate

Sodium propionate (C3H5NaO2) is the sodium salt of propionic acid. It occurs as colorless, transparent crystals or a granular crystalline powder. It is odorless, or has a faint acetic-butyric acid odor, and is deliquescent. It is prepared by neutralizing propionic acid with sodium hydroxide.

Applications

Sodium propionate is used as a food preservative, as a mold inhibitor in bakery products and in insect cell culture. It is also used in pharmaceuticals, cosmetics, agriculture and animal feed as preservative. It acts as a food additive. Further, it inhibits the growth of lactic acid bacteria.
